No dia 24 de abril de 2012, eu e meu sócio Edson, vimos nosso sonho se realizar com a inauguração do RESTAURANTE SHOGÁ. Por melhores que fossem as nossas previsões não imaginamos que teríamos tantos clientes logo na primeira semana.
Para agradar o paladar de nossos clientes, a quem prefiro chamar de amigos, seleciono pessoalmente os ingredientes que irão compor nossos pratos. Afinal, a qualidade da matéria prima é o segredo de um prato saboroso.
Todos os pratos são finamente decorados para que também encantem os olhos de nossos amigos, pois é assim que a comida japonesa deve ser: gostosa de comer e bonita de se ver.
Impossível ir ao Shogá e não me conhecer, faço questão de ir a cada mesa e saber a opinião das pessoa a respeito da comida, atendimento, decoração e qualquer outra sugestão ou crítica que seja feita. E, graças a Deus, em 90% da vezes só ouço elogios. Claro, que não se pode agradar a todos e alguns sugerem uma coisa ou outra. Desta forma, vou aparando as arestas para melhorar a cada dia mais.

Os japoneses acreditam firmemente na aprendizagem através da prática. Antes de o aprendiz poder pegar na faca, tem que trabalhar na cozinha, limpar chão, lavar pratos e realizar outros trabalhos ocasionais, durante vários anos. No oriente pode levar 10 anos de treino para se tornar um mestre e primeiro <em>chef.</em><br /><em></em><br /><em></em>O <em>chef </em>de sushi é considerado herdeiro da tradição samurai e deve manter os ideais desses eruditos cavalheiros, com padrões e valores muito elevados e uma grande auto-disciplina. Usam avental imaculado e uma tira na cabeça com nó, que revela quão seriamente eles consideram o seu trabalho.<br /><br />As facas são tão importantes para o <em>chef</em> de sushi como a espada para o samurai. As facas do <em>chef </em>são feitas de aço-carbono e são suficientes afiadas para cortar um fio de cabelo. Um <em>chef </em>de sushi tem as suas próprias facas que ele afia antes e depois de cada utilização, limpa-as após um ou dois cortes, embrulha-as e guarda-as num local seguro. Porém, um dos convidados estava muito contrariado com o menu, dizia que não comia peixe de maneira nenhuma, fosse frito, cozido assado e muito menos cru. O rapaz era muito divertido, dizia não se conformar com os preços pagos pela comida oriental, visto que o peixe era servido cru e não havia gasto com óleo ou gás, tudo isso era dito em clima de brincadeira de forma que não me ofendi.<br /><br />Ao invés disso, decidi bolar um sushi que ele gostasse, mas o rapaz se mantinha radical em seus princípios, então tive uma idéia, enrolei uma salsicha no arroz, na alga e fiz um sushi, ainda na dúvida o convidado resolveu experimentar. Os peixes, as algas e os frutos do mar estão presentes em praticamente todos os pratos da culinária japonesa. </div><br /><div align="justify"></div><br /><div align="justify">As terras são montanhosas e são poucos os locais onde é possível desenvolver a agricultura. O arroz é uma cultura de alta produção em áreas pequenas.O sushi é um alimento que tem origens remotas. Antigamente, no japão, os peixes para serem transportados para outros lugares eram conservados no arroz cozido. Os japoneses sabiam que o arroz liberava o ácido acético e láctico que garantiria a qualidade por mais tempo. Assim, retirava-se a cabeça e as vísceras do peixe e o filé era conservado salgando-o e acondicionando-o entre camadas de arroz, onde o peixe fermentava naturalmente, adquirindo um sabor ácido. </div><br /><div align="justify"></div><br /><div align="justify">A técnica também era usada pelos pescadores que ficavam pescando em alto mar, criando-se assim o sushi prensado.A técnica de conservação do peixe foi, aos poucos, transformando-se num prato, e o sabor ácido conseqüente da fermentação foi substituído por ácido acético e, mais tarde, pelo vinagre. Finalmente, o peixe e o arroz com vinagre passaram a contar com o shoyu, enriquecendo ainda mais o seu sabor.</div><br /><div align="justify"></div><br /><div align="justify">Por volta do século XIV, os japoneses, grandes apreciadores de arroz, passam a consumir não só o peixe como também o arroz, antes que este fermentasse. Surge assim o namanarizushi, que originou os tipos de sushi conhecidos na atualidade.No período Edo (séculos XVII a XIX), o arroz passa a ser temperado com o vinagre e o peixe, devido à fartura de pescados e frutos do mar na baía de Tóquio, passa a ser consumido cru e fresco. Surgiu assim o hayazushi. Preparado basicamente com arroz, peixes e frutos do mar, o sushi tornou-se moda em vários países do Ocidente, por seu sabor exótico e agradável e por ser reconhecido como uma das iguarias mais saudáveis do mundo.</div><br /><div align="justify"></div><br /><div align="justify"><a id="Etimologia" name="Etimologia"></a></div><br /><div align="center">Etimologia</div><br /><div align="justify">O termo conhecido como sushi é japonês. É ainda escrito em kanji (carateres chineses) para os pratos chineses antigos que carregam pouca semelhança com os sushi de hoje.</div><br /><div align="justify"><a id="Sushi_no__Jap.C3.A3o" name="Sushi_no__Jap.C3.A3o"></a></div><br /><div align="justify"></div><br /><div align="center">Sushi no Japão</div><br /><div align="justify">No início do século XIX, quando Tókio ainda era chamado Edo, surgiram em suas ruas os Yatais, barracas onde a população se alimentava rapidamente. Nessa época, surge o niguirizushi, o casamento perfeito do oniguiri (bolinho de arroz) e do peixe cru. O niguirizushi é também chamado de edomaezushi, porque eram utilizados pescados, frutos do mar e algas retiradas da baía de Tókio, produtos típicos de Edo. </div><div align="justify"></div><div align="justify"></div><div align="justify">Foi também em Edo que apareceu um homem chamado Hanaya Yohei, que teve a idéia de servir peixes (que até então eram conservados em sal ou azedados) fatiados crus sobre bolinhos de arroz. A partir de 1980, nos Estados Unidos, difunde-se a idéia de que a cozinha japonesa, especialmente o sushi, é saudável, o que causou o chamado "sushi boom" por todo o mundo, com a abertura de sushi-bares, rodízios de sushi, utilização de robôs na sua produção etc.O sushi contemporâneo caracteriza-se pela oferta de novos tipos de sushi com a adoção de elementos culinários próprios de cada país, aliados à técnica e à inspiração dos sushimen.
